Lazy Berry Pie

I created this last night with the hope that whatever it turned into would be edible for breakfast this morning.

Pretty low expectations I must say, but I pretty darn near shocked my socks off.

The hardest part was trying to figure out what I made. It’s not a tart, not a cobbler and not a pie. But like an amazing combination of all three. It’s a little custardy, a little crumbly, a little….. pretty flippin awesome. Nothing much else to say except it’s so easy i put “lazy” in the name. If I can make two and get them in the oven in 10 minutes with three out of four children sick…. then thank the good Lord for this culinary epiphany. Because I obviously needed to be cut a break.

Ingredients:

1 1/2 cups almond flour
3 Tbsp raw sugar (rapadura, sucanat)
1/4 tsp salt
5 Tbsp raw coconut oil
8 oz frozen berries of choice, about 1.5 cups. Fresh could be used I’m sure but I haven’t tested that yet. I happened to have boysenberries in my freezer.
2 tsp cinnamon
1/4 tsp nutmeg
1/3 cup raw sugar
2 eggs
1 1/4 cups raw cream (whole milk will work too)

1. Put first four ingredients in a pie pan. Using a fork, smash the coconut oil until it resembles coarse crumbs. Using the fork, evenly spread and tamp down the “pie crust”. You don’t have to spend a lot of time on it.

2. Put frozen berries in the pie pan. Cover with sugar, cinnamon and nutmeg.

3. Crack eggs into cream and whisk together. Pour evenly over berries.

4. Bake at 350° for about 35 minutes or until crust edges start to brown.

There you have it folks, Lazy Berry Pie.
